For Chef Josh Podwils, the dream began simply: to create beautiful food. Over time, that vision grew into something deeper, a desire to create not just memorable dishes, but meaningful experiences.

Rosemary and Fox was built on the belief that dining should feel both elevated and welcoming. It’s a place where guests feel genuinely cared for, where thoughtful cuisine meets warm hospitality, and where every visit feels worth celebrating. We hope it becomes the restaurant you return to for life’s milestones, spontaneous evenings out, and the moments that linger long after the last bite.

At its heart, Rosemary and Fox is about community. We believe great restaurants do more than serve food, they bring people together and create a sense of belonging. Our goal is for every guest to walk through our doors feeling seen, valued, and well taken care of.

Our “why” also lives within our family. As parents to Ruby and Corbin, we wanted to build something that reflects the values we hope to pass on to them: integrity, perseverance, and the courage to pursue a dream. Rosemary and Fox is our way of showing them that goals are achieved not only through hard work, but by believing in yourself and surrounding yourself with people who believe in you too.

This restaurant exists because of community, partnership, and trust, and we carry that responsibility into every detail, every plate, and every interaction. To us, Rosemary and Fox is more than a restaurant. It’s family. And our greatest hope is that every guest who joins us feels exactly that.

Chef Podwils makes his entrance to the Bend food scene with his time at Victorian Cafe 

2004-2015

2023

An opportunity arises for chef Podwils to take over as executive chef at Jackalope Grill and he goes for it. 

2026

Josh and Kate Podwils extend their deepest gratitude to the Hough brothers, Paul and the dearly remembered Perry Hough. Their belief, generosity, and support helped bring Rosemary & Fox to life. Perry’s spirit and legacy will always remain part of the heart of this restaurant.

Ready for a change, Josh branches out on his own and creates a pop-up dinner series called Loyaute, serving French inspired cuisine at various locations throughout Bend.

Josh Podwils puts his culinary skills to the test as head chef at Brother Jon's Alehouse in Bend, OR

After being executive chef at Jackalope Grill, chef Podwils had the opportunity to make the restaurant his. Rosemary and Fox is born.
